Sweet Peas in Parmesan Herb Sauce

sweet peas imagelIn this recipe I use Washington-grown sweet peas without the brining. This allows the true natural flavor and sweetness of these organic peas to shine. I toss in organic diced onion as an accent ingredient, providing a sharp and savory contrast to the delightful sweetness of the peas. The sauce is lighter and very flavorful. I start with organic vegetable broth, garlic, onion and thyme and simmer then finish with a Parmesan cheese dusting.
