Spinach & Swiss Chard with Basil Roasted Garlic Sauce

spinach swiss chard webWhen I make spinach and Swiss chard for my family I always choose beautiful, bright, firm leaves for their tenderness and sweetness. First, the greens are soaked, chopped and blanched while I slow roast garlic cloves to bring out the caramelized sugars and fill the kitchen with a sweet aroma. The garlic cloves are then blended with olive oil and spices creating a mellow and smooth textured sauce. The result is a savory combination of garlic and greens and a nutritional powerhouse!
