Southwest Vegetables in Ranchero Sauce

southwest veggies webMy family loves Mexican style dishes which take time and patience. My ranchero sauce is a slow cooked, mildly spiced blend of organic red chiles, garlic and tomato, that is ready in minutes. The addition of organic super sweet corn, sweet potatoes, onions, plus red and green peppers provides a colorful, creative and flavorful side dish for many occasions.
